Choose a dry day – ideally after a few days without rain.
Carefully dig or pull the onion out of the ground, do not throw it to avoid damaging the skins.

Let it pre-dry directly on the bed (if it is not raining) for 1-2 days so that it dries from below.

After pre-drying on the bed, it is time for thorough drying, namely:

In an airy, shady and dry place – ideally a basement, veranda or shed.
Spread the onion in a single layer on a sieve, newspaper or wooden mat.
Drying takes 2-3 weeks – during this time the onion gradually ripens and gets rid of excess moisture.
Turn the onion regularly so that it dries evenly.
Finally, remove the roots and shorten the stem to 5–7 cm.
