Recipe: Refreshing dragon fruit peel drink

Ingredients:

Grated peel of 1-2 dragon fruits (approx. 100-150 g)
500 ml water
Juice of ½ – 1 lime or lemon (to taste)
1-2 tablespoons sweetener (agave syrup, honey or sugar) – optional

Ice cubes
Preparation:

Cleaning: Wash the dragon fruit peel thoroughly under cold water.
Breaking: Cut the peel into small pieces.
Cooking: Place the peel pieces and water in a saucepan. Bring to the boil, then simmer over medium heat for approx. 10-15 minutes until the peel is soft and the water is bright red.
Strain: Pour the liquid through a fine sieve into a glass or pitcher to remove the peel pieces. Squeeze the peels well to extract as much color and juice as possible.
Seasoning and chilling: Let the drink cool. Add the lime/lemon juice and optional sweetener. Taste and adjust the sweetness and acidity to taste.

A colorful, healthy and delicious jelly that is perfect with yogurt, granola, toast, or simply on its own.
Ingredients:

Grated peel of 2-3 dragon fruits (approx. 200-250 g)
400 ml water
Juice of 1 lime or lemon
150-200 g sugar (depending on the sweetness and taste of the fruit)
1 sachet 2:1 jelly sugar (or agar-agar for a vegan version – approx. 4-6 g depending on the desired firmness)

Preparation:

Cleaning and chopping: Wash the dragon fruit peel thoroughly and cut into very small pieces.

Cooking and pureeing: Put the peel pieces and water in a saucepan. Bring to the boil and then simmer for about 15-20 minutes until the peel is very soft.

Blending: Puree the mixture directly in the saucepan or in a blender until smooth. The colour should now be very intense.

Strain (optional): For a smoother jelly, you can strain the pureed mixture through a fine strainer or cheesecloth to remove any stringy residue. This is optional if you want a more rustic texture.

Prepare the jelly: Return the pureed peel pulp (or strained juice) to the pot. Add the sugar and lime juice.

Leavening agent: Stir in the jelly sugar packet (or agar-agar). Bring the mixture back to a boil, stirring constantly, and continue boiling for the time indicated on the jelly sugar packet (usually 1-4 minutes).
Filling: Immediately pour the hot jelly into prepared, sterile jars and seal tightly.

Refrigerate: Turn the jars upside down for about 5-10 minutes, then let cool completely at room temperature to allow the jelly to set.

Storage: The jelly will keep for several months in a cool, dark place. Refrigerate after opening.
