Instructions:

1. Prepare the Brioche Dough:

  • In the bowl of a stand mixer fitted with a dough hook, combine the flour, yeast, sugar, and salt.
  • In a separate bowl, whisk together the warm milk and eggs.
  • Pour the milk and egg mixture into the dry ingredients and mix on low speed until a shaggy dough forms.

3. Shape the Brioche:

  • Once the dough has doubled, punch it down and divide it into two equal portions.
  • Take one portion of the dough and roll it out into a rectangle, about 1/4 inch thick.
  • Spread the cocoa mixture evenly over the surface of the dough.
  • Roll the dough up tightly like a Swiss roll, starting from the long edge.
  • Chill this roll for 30 minutes in the freezer.
  • Once chilled, slice the roll into 1/4 inch thick rounds. These rounds will be your leopard spots.
  • Roll the remaining plain brioche dough into a large rectangle.

  • Roll the dough up tightly from the long edge.

4. Proof and Bake:

  • Grease a loaf pan.
  • Place the rolled brioche into the prepared loaf pan.
  • Cover with plastic wrap and let it proof for 1 hour, or until almost doubled in size.
  • Preheat your oven to 180°C (350°F).
