Ingredients:

  • 6-8 cloves of minced garlic
  • 8 ounces of thin rice noodles (1 MM or S)
  • 1 cup of diced green onions, divided (about 2 bunches used)
  • 3 tablespoons of salted butter
  • 3 tablespoons of soy sauce or tamari (or a gluten-free soy sauce)
  • 1-2 tablespoons of sugar (coconut or light brown sugar, or use hoisin)

Instructions:

Step 1: In a pot of almost boiling water, soak the rice noodles for about 4 minutes until al dente. Drain and rinse with cold water. Set aside.

Step 2: In a large skillet, melt the butter over medium-high heat. Once the butter has melted, add about 3/4 cup of diced green onions to the skillet along with the minced garlic. Sauté for about 1-2 minutes or until the garlic is fragrant.

Step 3: Next, add the sugar and stir well until blended. Then, add the soy sauce and allow everything to simmer for about a minute.

Step 4: To the skillet, add the noodles and continue to cook for another 5-7 minutes or until the noodles have fried and absorbed the sauce.

Step 5: Transfer the noodles to plates and garnish with additional green onions and your preferred hot sauce or chili garlic sauce. Serve and enjoy!

Notes:

  • Adjust the sweetness to your preference.
  • Swap coconut sugar with light brown sugar, hoisin, or honey.
  • Use peanut oil or sesame seeds in place of butter for extra flavour.
  • Feel free to add your preferred protein.
