INGREDIENTS
- ground walnuts – 7 oz (200 g)
- powdered sugar – 5 oz (140 g)
- egg whites — 3 pcs.
- granulated sugar – 2.1 oz (60 g)
- vanilla powder — 2 pcs (0.2 g each)
- salt — 1 pinch
HOW TO COOK
Finely chop half of the walnuts and the other half a little coarser.
Mix them in a bowl with the powdered sugar and vanilla.
Put the egg whites in a bowl with a pinch of salt, beat them for a few minutes with a mixer, then add a little more crystal sugar, while beating.
Add the nut mixture to the egg whites, stirring gently with a wooden spoon from bottom to top.
Line a large baking dish with parchment paper.
With a small spoon, take some of the mixture and place it in small piles at a distance from each other. They will puff up while cooking.
Bake the walnut cookies at 300°F (150°C) in a preheated fanless oven for 30 minutes.
During cooking, DO NOT open the oven, time and degrees are quite sufficient.
Cool the baked cookies on a wire rack.
Note: To keep them crunchy, store the walnut cookies in an airtight jar immediately after cooling.
