An incredibly tasty grated pie with cheese and berries can easily become a worthy substitute for a cake. It’s just the perfect pastry for tea or coffee.

INGREDIENTS:
For form 21/21
Dough:
- Flour 350 grams
- Sugar 100 grams
- Butter 120 grams
- Egg 1 pc
- Baking powder 1 tsp.
- A pinch of salt
- Turmeric 1/3 tsp. at will
- Vanillin 1 tsp.
- Cold water 4 tbsp. l.
Filling:
- Cheese 400 grams
- 2 eggs
- Sugar 100 grams
- Semolina groats 1.5 tbsp. l.
- Vanilla sugar 1 tsp.
- Berries 200 grams
- Starch or flour 1 tbsp. l.
Preparation:
- In a bowl, sift flour, baking powder, turmeric (for color and benefit), salt, sugar, vanilla sugar, cold butter cut into small cubes.
- Quickly rub everything into crumbs, it is not necessary to achieve homogeneity, if there are pieces of butter, it is normal.
- Then add the egg and knead the dough. The dough should come together in a lump, it is not necessary to achieve homogeneity, if it turned out too crumbly, you need to add water. I added 4 tbsp. l.
- Gather the dough into a lump, divide it into 2 equal parts, put each in a bag and put it in the freezer for 1 hour to cool.
- For the filling, beat the cheese with a blender, add vanilla, eggs, sugar, semolina, beat again until smooth.
- Cover the form with baking paper.
- Grate one piece of dough on a large grater, spread it in an even layer.
- Put the cheese filling on the dough, then the berries (I have frozen black currants, but any will do: raspberries, cherries, blueberries, lingonberries.
- Roll the frozen berries in starch or flour beforehand.
- Then rub the second piece of dough on top, carefully distributing it in a form, do not compact the dough.
- Bake the cake at t 180 g until golden brown for 35-40 minutes. Focus on your oven.
Cut when cooled, sprinkle with powdered sugar on top if desired. It is very tasty, I am sure that you will like it!
