Poached eggs have a reputation for being the “king of breakfast” dishes – but it’s really just a matter of physics and a little timing. If you’re not keen on the infamous “egg swirl” in your pot, you need this foolproof method.

The Tools
Fresh eggs: This is the most important hack. The fresher the egg, the more stable the egg white and the less likely it is to run.
A fine sieve: To remove the watery egg white beforehand.
Vinegar: White wine vinegar or apple cider vinegar (helps the egg white set faster).
A small bowl or cup.
Step-by-Step Instructions
- Preparation (The Pro Trick)
Crack the egg carefully over a fine-mesh sieve. Let it drain for about 30–60 seconds. You’ll see that some of the egg white runs through, becoming as runny as water. This is exactly the part that usually forms those unsightly white strands in the saucepan. - The Water Bath
Fill a saucepan with about 10 cm of water. Add a splash of vinegar (no salt! Salt tends to dissolve the egg white). Bring the water to a simmer, but not a rolling boil. Only small bubbles should rise to the surface (approx. 80–90°C). - The Gentle Slide
Let the egg slide from the sieve into a small cup. Create a very gentle whirlpool in the water with a spoon. Place the cup close to the surface of the water and carefully slide the egg into the center of the whirlpool.

Let the egg poach for 3 to 4 minutes. Don’t stir it!
3 minutes: Very runny center.
4 minutes: Soft-boiled, creamy center.

Remove the egg with a slotted spoon. Briefly pat it dry on a piece of kitchen paper so your toast doesn’t get soggy.
Why this works
Physically speaking, we’re utilizing two effects: The vinegar lowers the pH, which accelerates the denaturation (solidification) of the proteins. Straining removes the unstable protein chains that wouldn’t adhere to the yolk anyway.
