Ingredients
2 cups diced, boiled potatoes
2 cups diced, cooked carrots
1 cup cooked snap
peas 1 cup diced cucumber
1/2 cup diced green onions
2 tablespoons light mayonnaise
2 tablespoons low-fat Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
Salt and freshly ground black pepper, to taste
Preparation
In a large bowl, combine the potatoes, carrots, snap peas, cucumber, and green onions.
In a small bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, cider vinegar, salt, and pepper.
Add the dressing to the salad and mix well.
