Zucchini and potato burgers, a quick second course

The courgette and potato burger is a good idea for making meatless burgers. A solution for a dinner with vegetarian guests or a nice way to get children to eat zucchini.

They are very easy to prepare, they can be cooked in the oven but also in a pan.

You can enrich the zucchini burgers with cheese or spices.

How to prepare the courgette and potato burgers
Ingredients:
2 courgettes
2 potatoes (200 g)
50 g of grated Parmesan cheese
1 egg
30 g of breadcrumbs
Salt and pepper Olive oil
Preparation:
Wash the potatoes and cook them in a pot of boiling water. Wash the courgettes well and remove the ends.
Grate the zucchini with a large grater. Arrange the zucchini on kitchen paper.
Peel the potatoes and mash them with a fork. Mix the potatoes with the grated zucchini.
Add 1 egg, grated cheese, breadcrumbs, salt and pepper and mix well to obtain a homogeneous mixture.
Form burgers. Heat a non-stick pan with a little oil.
Cook the zucchini burgers for 4/5 minutes per side. If you want to cook them in the oven, bake the burgers at 180°C for 25 minutes.
Serve the zucchini and potato burgers hot.
