Eggplant stuffed with ground beef: a tasty recipe

Aubergines stuffed with minced beef, an excellent idea for preparing aubergines is to use them as a “container” for a tasty stuffing made with minced meat and cheese. This is a perfect recipe if you want to prepare a low-calorie dish, as it contains very few carbohydrates.

How to prepare aubergines stuffed with minced beef
Ingredients for 4 people:
400 g of minced beef (or the same amount of minced chicken or turkey)
60 ml of water
30 ml of tomato puree
10 g of grated scamorza
10 g of grated Parmesan
2 green onions
1 carrot
2 tablespoons of olive oil
1 aubergine
1 clove of garlic
salt and pepper
Paprika
Chopped parsley
Preparation:
First, wash the aubergine and cut it lengthwise.
Make cuts in the flesh
Arrange the two halves of the aubergine on a baking tray and bake at 180°C for 40 minutes.
After 20 minutes, turn them over to make sure they are cooked evenly.
Once cooked, let them cool
Pour the olive oil into a pan and sauté the garlic and the sliced ​​green onions
Add the washed, peeled and chopped carrot
Add the minced meat and continue cooking over high heat , stirring with a wooden spoon
When the meat is completely cooked, remove the aubergine pulp with a spoon and add it to the mixture with the tomato puree and water
Season with salt, pepper and spices
Continue cooking for a few more minutes
Finally , add the chopped parsley.
Spoon the filling over the aubergines
Sprinkle with the cheese.
Bake at 180°C for 10 minutes
