Courgette: 1
Red pepper: 1/4
Eggs: 2
Grated cheese: 200 g (1 cup)
Salt: 4 g (1 teaspoon)
Pepper: 4 g (1 teaspoon)
Flour: 125 g (1 cup)
Baking powder: 5 g (1 teaspoon)
Preparation:
In a bowl, whisk the eggs with salt and pepper. Grate the courgette and add it to the bowl with the chopped red pepper and grated cheese.
Mix well and add the flour and baking powder.
Pour the mixture into muffin tins and bake at 180°C for 25 minutes.
