INGREDIENTS FOR 8
YIELDS
- 3 large ripe bananas
- 2 eggs
- 1/2 cup (115 g) melted butter
- 1/2 cup (100g) white sugar
- 1/4 cup (50g) brown sugar
- 1 ½ cups (190 g) all-purpose flour
- 1/3 cup (40g) cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 tsp salt
- 1 teaspoon vanilla extract
- 1 cup (175 g) chocolate chips + for garnish
DIRECTIONS
1. Preheat oven to 360 F (180 C).
2. In a large bowl, combine flour, cocoa powder, baking powder, baking soda and salt. Put aside.
3. In a large bowl, mash the bananas, add the eggs and whisk until combined. Add melted butter, vanilla extract and whisk until incorporated. Add both sugars and whisk until incorporated.
4. Add dry ingredients to wet, mix until combined and smooth. Add the chocolate chips and mix.
5. Pour the batter into a 9 X 5 inch (23 X 12 cm) loaf pan lined with parchment paper. Sprinkle chocolate chips on top (optional).
6. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Let cool before cutting.
