It is packed with bacon, egg, spinach, cheese, mushrooms, and peppers. Rev up your mornings with this filling casserole!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Ingredients<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6 slices of bacon, cooked and crumbled<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 eggs<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 1\/2 c. egg whites (you can use 6-7 eggs, if you don\u2019t want to use egg whites)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 1\/4 c. shredded cheddar cheese<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 c. sliced mushrooms<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 c. chopped green peppers<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 c. chopped red onions<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 c. chopped red peppers<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">salt and pepper to taste<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2-3 c. frozen spinach \u2013 thawed and drained (thaw the spinach and drain the excess water)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>How to make Keto Low-Carb Bacon, Egg, and Spinach Breakfast Casserole<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Step 1: Prepare the oven. Preheat it to 375 degrees. Using cooking spray, grease a 9 x 13-inch baking dish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Step 2: Over medium-high heat, place a skillet. Add the chopped veggies except for the spinach and saute for a couple of minutes until tender.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Step 3: To the bottom of the baking dish, add the veggies, evenly spreading them. When done, take the casserole out of the oven and let it cool.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Step 7: Serve and enjoy!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Notes:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For this recipe, you can use any variety of shredded cheese.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If desired, you can use fresh spinach.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tightly cover any leftovers and keep them in the fridge for up to 3 to 4 days.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You can also freeze this dish for up to 3 months.
