The chicken is soft, crispy, and scrumptious, and the cauliflower rice is packed with flavor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the Chicken:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 large cloves of garlic, minced<\/li>\n\n\n\n<li>1\/2 cup white onion, chopped<\/li>\n\n\n\n<li>2 large boneless and skinless chicken breasts, halved horizontally to make 4<\/li>\n\n\n\n<li>4 tbsp unsalted butter, divided<\/li>\n\n\n\n<li>1\/2 cup fresh Parmesan, finely grated<\/li>\n\n\n\n<li>2 large cloves of garlic, grated<\/li>\n\n\n\n<li>1 tsp Italian seasoning<\/li>\n\n\n\n<li>1 tsp paprika<\/li>\n\n\n\n<li>Salt and fresh cracked black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">For the Parmesan Cauliflower Rice:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 head cauliflower, riced<\/li>\n\n\n\n<li>Juice of one lemon (plus zest, if you like)<\/li>\n\n\n\n<li>2 tbsp vegetable stock<\/li>\n\n\n\n<li>1\/4 cup fresh parsley, chopped<\/li>\n\n\n\n<li>Red chili pepper flakes, optional<\/li>\n\n\n\n<li>Salt and fresh cracked black pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Place the Parmesan cheese, grated garlic, paprika, and Italian seasoning on a shallow plate. Mix well until combined. Season the chicken breasts with salt and pepper, then coat in the Parmesan mixture. Shake off the excess and set aside.<\/li>\n\n\n\n<li>In a large non-stick skillet, melt 2 tbsp butter over medium-high heat. Add the chicken cutlets to the skillet once the butter has melted and cook for about 3 to 4 minutes per side until golden and completely cooked. Transfer the chicken cutlets to a plate when done.<\/li>\n\n\n\n<li>Melt 2 tbsp butter in the same pan. Add the garlic and onion and cook for about a minute until aromatic. Then, add the riced cauliflower and mix well. Continue to cook for another minute, stirring regularly.<\/li>\n\n\n\n<li>To the skillet, pour in 2 tbsp vegetable stock, about half the parsley, and lemon zest (optional). Stir well and cook for an additional minute to reduce the juices. Next, add the lemon juice and a couple of sprinkles of Parmesan cheese.<\/li>\n\n\n\n<li>Adjust the seasonings as needed. Add the rest of the parsley and stir. Place the chicken breasts on top of the cauliflower rice and quickly reheat.<\/li>\n\n\n\n<li>Remove from heat when done and serve the garlic butter chicken with Parmesan cauliflower rice immediately. Sprinkle with fresh cracked black pepper, red chili pepper flakes, and extra Parmesan.
