second course that immediately brings to mind childhood and Sunday family dinners. A variation of the classic baking preparation, popular with adults and children, consisting of a mixture of minced meat and a delicious filling of ham and cheese.

The preparation is very simple: just mix the minced meat with the eggs, the breadcrumbs, the soaked and well-wrung out stale bread and the grated Parmesan. The resulting mixture is then spread out in a rectangle on baking paper, filled with cooked ham and sliced provola cheese, shaped into a cylinder and then sprinkled with a handful of breadcrumbs.

The result is a tasty and irresistible dish that, when cooked in a pan with a splash of white wine and hot vegetable broth, tastes soft, juicy and with a wonderfully stringy center. Once ready, you can serve the meatloaf with a portion of fried potatoes, scalloped vegetables, grilled zucchini or, more simply, with a mixed salad and slices of fragrant whole-grain bread.

If you prefer, you can also prepare it in advance and then heat it when serving or, when the temperatures rise, enjoy it sliced, warm or cold: it will still be delicious. For a version with sauce, the proof of the final sip, it is enough to follow our instructions, then put the meat in a pan with 800 ml of very hot tomato sauce and let everything cook for about 45 minutes.

Meatloaf is also a refrigerator-emptying and zero-waste recipe that can be customized to your liking with the ingredients available at home: slices, scamorza, sweet prosciutto, mortadella… But also sautéed mushrooms, spinach, diced pumpkin or other vegetables depending on your needs Season.

Learn how to make meatloaf in the skillet with step-by-step instructions and advice. If you liked this recipe, also try Crusted Meatloaf.

How to make meatloaf in a skillet

Step 1
Collect the minced meat in a bowl and add the eggs
1
.

Step 2
Add the grated Parmesan
2
.

Step 3
Add the old breadcrumbs
3
, previously soaked and well squeezed.

Step 4 Season
with chopped parsley
4
and salt.

Step 5
Start by mixing the ingredients with the tines of a fork
5
.

Step 6
Continue kneading with your hands
6
until a homogeneous mixture is formed.

Step 7
Spread the prepared dough on a sheet of baking paper and form a rectangle
about
1 cm thick.

Step 8
Fill with the scamorza slices
8
Lay out the meatloaf, slightly overlapping, leaving a few centimeters of space in the top part of the rectangle so that the filling does not come out when you close the meatloaf.

Step 9
Form a second layer with the cooked ham
9
.

Step 10
Roll up the meatloaf using the baking paper
10
until you get a cylinder.

Step 11
Shape the meatloaf with your hands
and
sprinkle with breadcrumbs.

Step 12
Heat a dash of oil in a non-stick pan and place the meatloaf in it
12
.

Step 13
Fry well on all sides
13
.

Step 14
Pour in the white wine, let it evaporate and then add the boiling vegetable stock
14
.

Step 15
Cover with a lid and cook over low heat for about 40 minutes. If the gravy is too runny, remove the lid 10 minutes before the end.
15
and reduce the sauce.

Step 16
Once the meatloaf is ready, place it on a serving plate and let it rest for a few minutes before slicing.
16
; Then bring to the table and serve.

Advice
Before you cut the meatloaf into slices, we recommend that you let it rest for at least ten minutes: this way the meat doesn’t crumble when cutting and you get perfect, intact slices.

For a richer and tastier taste, you can opt for mixed ground beef and pork. If you love white meat, you can try a chicken or turkey meatloaf enriched with spices and chopped aromatic herbs.

If you wish, you can choose red wine instead of the white wine used for cooking: more full-bodied and with distinct aromatic notes.

Storage
The meatloaf can be stored in an airtight container in the refrigerator for a maximum of 2 days.

IngredientsFOR THE DOUGHMINCED MEAT600 grSTANE BREADCRUMBS150 grGRADED PARMESAN CHEESE30 grEGG3CHOPPED PARSLEYqbSALEqbFOR
