One of the most requested appetizers in pizzerias, together with battered courgette flowers , Ascolana olives , croquettes and potato chips , it is also perfect at aperitif time , presented in the classic straw paper packets, or during a lunch or a buffet dinner. Here the cherry mozzarella, squeezed and well drained, are coated in a rich breading and then dipped, a few pieces at a time, into boiling seed oil: the result will be tasty nuggets, crunchy on the outside and stringy .to the heart, which will conquer everyone.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once ready, you can arrange the mozzarella on a serving plate and serve them combined with a fragrant fresh tomato and basil sauce , as in our version, or you can skewer 4-5 of them and enjoy them as appetizing street food .<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Preparing fried mozzarella at home therefore does not require particular skills, but to prevent it from opening during cooking, melting in boiling oil and causing it to splash everywhere, some simple precautions must be followed. First let it drain thoroughly . To do this, simply collect it in a colander, transfer it to the fridge for a couple of hours and then dab it with a sheet of absorbent kitchen paper: in this way it will completely lose the preservation liquid and will remain dry and free of humidity.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Another fundamental rule is to seal the mozzarella perfectly with a &nbsp;breading made from beaten eggs, semolina flour and breadcrumbs. For an optimal result and an even crispier result you can repeat this step a second time or, alternatively, before breading them, you can dip them in a quick batter made with flour, water and eggs. In our recipe we used cherry mozzarella , small and with little water inside, but if you prefer you can also opt for fiordilatte: just cut it into slices and then proceed as per the instructions. Break the eggs into a bowl and beat them with the tines of a fork, arrange the breadcrumbs on one plate and the flour on another.
