It\u2019s also a great way to use leftover mashed potatoes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tips<br>Mash the potatoes by hand, don\u2019t be tempted to use a food processor. Using a food processor might over-process them and make them gluey. Use a potato masher or grate them with the large holes of a box grater.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Make sure to use a neutral oil suitable for frying at higher temperatures. Canola oil, peanut oil, sunflower oil, or corn oil will be suitable. Don\u2019t make your oil too hot, otherwise, the potato fritters will burn too quickly. Use a thermometer to heat the oil to about 350\u00b0F.
