My mother-in-law never lets us go home without gaining at least a pound. She spoils us with her food! My husband feels amused every time I try to go on a diet a week before the visit. He tells me I look okay and I am not gaining any pound at all. I always tell him, \u201cAfter our visit, I will gain pounds! Let me lose them in advance\u201d!&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">He just laughs. I know it\u2019s ridiculous and it\u2019s a long, lost cause, but can you blame me? My mother-in-law is a good cook. Anyone who says no to her food is not in her right mind.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One of her best sellers is her apple pie. It\u2019s not an ordinary apple pie. She places lots of nuts on them depending on her mood.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sometimes, she uses hazelnuts. Sometimes, she uses pecans. But most of the time, she uses walnuts, which reminds me of this apple walnut pie recipe from Bewitching Kitchen.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This pie is full of fruity and tangy goodness. Those flavors interlacing with the sugar and the crunch of the walnuts result to one amazing decadent pie. I couldn\u2019t have enough every time it\u2019s being served in front of me.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So yes. I think I gained a centimeter on my waistline after that visit. Thank you for this recipe, Bewitching Kitchen!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 C. water<\/li>\n\n\n\n<li>4 C. raisins<\/li>\n\n\n\n<li>1 C. light brown sugar<\/li>\n\n\n\n<li>5 T. cornstarch<\/li>\n\n\n\n<li>1\/2 tsp. cinnamon<\/li>\n\n\n\n<li>1\/2 tsp. salt<\/li>\n\n\n\n<li>2 tsp. lemon juice<\/li>\n\n\n\n<li>3 T. butter (not margarine)<\/li>\n\n\n\n<li>1 tsp. vanilla extract<\/li>\n\n\n\n<li>2, 9\u2033 deep dish pie shells<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Combine raisins and water in a med. pot, bring to a boil and cook for 5 minutes. Blend the brown sugar, cornstarch, cinnamon and salt together, slowly stir into the hot raisins.<\/li>\n\n\n\n<li>Cook and stir until the syrup has thickened (happens pretty quick). Remove from the heat and stir in the lemon juice, butter and vanilla. Cool slightly.<\/li>\n\n\n\n<li>Pour the raisin filling into one of the pie shells, remove the pie crust from the other shell and place on top, sealing the edges by pinching them together. Use a knife to make a couple of slits in the top of the pie.
