Strawberries are about 90% water, which means if you just chop them up and throw them into cream, they turn into icy, rock-hard pebbles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To fix that, this classic recipe macerates and slightly reduces the fruit first to draw out the water and concentrate the sugars.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>1 lb (450g)<\/strong> fresh strawberries, hulled and sliced<\/li>\n\n\n\n<li><strong>\u00be cup<\/strong> granulated sugar (divided into \u00bd cup and \u00bc cup)<\/li>\n\n\n\n<li><strong>1 tbsp<\/strong> lemon juice (brightens the fruit flavor)<\/li>\n\n\n\n<li><strong>1 cup<\/strong> whole milk<\/li>\n\n\n\n<li><strong>2 cups<\/strong> heavy whipping cream<\/li>\n\n\n\n<li><strong>1 tsp<\/strong> pure vanilla extract<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">The Method<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>1.Macerate the strawberries:<\/strong>2 hours.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a bowl, toss the sliced strawberries with <strong>\u00bc cup of the sugar<\/strong> and the lemon juice. Let them sit at room temperature for about 2 hours. Stir in the strawberry puree.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>4.Chill the mixture:<\/strong>Chilling is non-negotiable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover the bowl and refrigerate the base for <strong>at least 4 hours<\/strong> (overnight is best). The mixture needs to be completely cold before going into your ice cream maker, or it won&#8217;t churn properly and will develop ice crystals.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>5.Churn and freeze:<\/strong>20-25 min.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the chilled base into your ice cream maker and churn according to the manufacturer&#8217;s instructions (usually 20\u201325 minutes). It will look like soft-serve. No Problem.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You can easily make a <strong>no-churn version<\/strong>. Whip the 2 cups of heavy cream to stiff peaks. In a separate bowl, mix the strawberry puree with a 14-oz can of sweetened condensed milk (skip the regular milk and sugar).
