When we talk about meat, which is extremely cheap, rich in nutrients and full of protein, iron and vitamins, but often subject to prejudice, we naturally talk about offal &#8211; especially the liver, heart or stomach.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Although they have their place in traditional Slovak and Czech cuisine (who has not heard of tripe soup, liver with onions or chicken hearts in cream sauce?), modern consumers often avoid them in the supermarket.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why are offal so nutritious?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Offal often outperforms classic muscle meat (sausages, neck) in many ways:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">High iron and vitamin B12 content: Liver is one of the richest natural sources of easily absorbable iron and vitamin B12, which is excellent for fighting anemia and supporting energy levels.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Protein for the taste buds: The price-performance ratio is unbeatable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vitamin A and zinc: They support the immune system, vision and skin health.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Collagen: The heart and stomach contain a lot of connective tissue, a natural source of collagen for joints.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why do Slovaks (and Czechs) avoid offal?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Psychological block: For the younger generation, the idea of \u200b\u200bconsuming offal can be unpleasant. They prefer a clean, neatly wrapped fillet or brisket steak.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The \u201cToxin Filter\u201d Myth: Many believe that the liver is full of toxins. While the liver neutralizes toxins, it does not store them\u2014in fact, it stores the best nutrients.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">More difficult to prepare: Offal requires proper preparation. If the liver is oversalted to begin with, it will become tough; if the stomachs are not cooked, they will be rubbery.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Comparison: Classic meat vs. offal<br>Characteristics: Chicken breast \/ Pork neck; Beef \/ Chicken liver and heart<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Price: High to premium; Very low (often half price)<br>Vitamin content: Average; Extremely high (especially vitamins A and B complex)<br>Iron content: Low (especially chicken); Very high<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Preparation: Quick and easy; Requires special preparation and cleaning<br>Beginner&#8217;s tip: If you don&#8217;t like offal but want to try it for health or financial reasons, start with chicken liver. It&#8217;s tender, cooks in a few minutes, and tastes great with onions and a little cumin.
