It&#8217;s not a sign that the meat has gone bad or that there are chemicals in it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here&#8217;s an explanation of what&#8217;s actually going on:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Physics instead of chemistry<br>It&#8217;s not mold or an &#8220;oil spill,&#8221; but an optical phenomenon called the diffraction (bending) of light.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Muscle structure: Meat is made up of tightly packed muscle fibers. When a ham is cut (especially with a very sharp knife or machine) perpendicular to these fibers, their ends are exposed.<br>Light reflection: Muscle fibers contain iron, fat, and other elements.
