If you look closely, the water often just beads off without actually wetting the broccoli: This is due to the plant’s natural wax coating, which unfortunately also protects dirt, small insects, and pesticides trapped between the florets.

Here are the most important steps for professionally and safely cleaning broccoli:

Why isn’t water alone enough?

The dense structure of broccoli provides ideal hiding places for parasites and dust. Washing it under running water only cleans the outer layer; the inside remains almost untouched.

The right method: Active soaking
For thorough cleaning, soaking with a surface tension-breaking or disinfecting agent is crucial:

Preparation: Instead of washing the whole head, divide the broccoli into small florets. This will expose all hidden areas.

The washing solution: Soak the florets in a large bowl of cold water and add one of the following ingredients:

Baking soda: (1 tablespoon per liter of water) Helps remove pesticide residue more effectively.

White wine or apple cider vinegar: (1 part vinegar to 3 parts water) Excellent for rinsing away small insects and removing bacteria.

The soaking: Let the florets soak for about 5–10 minutes. You will see the water penetrate the small florets.

The final rinse: Rinse the florets under running cold water to remove any remaining solution.

Expert tip: To preserve the vibrant green color and all the vitamins (especially vitamin C and glucosinolates), don’t boil the tomatoes for too long in a lot of water. Steaming for five minutes is the best way to preserve the cleaning you’ve just done!

Which soaking solution do you use? Baking soda, vinegar, or do you have another trick up your sleeve?

You’re right, cleaning broccoli can be quite a chore!
