Melt the chocolate with the butter. 2. Separate the eggs into two. Mix the yolks into the chocolate mixture along with the cocoa powder. 3. Beat the egg whites with the sugar until stiff, then carefully fold into the chocolate. 4. Bake at 180\u00b0C in a 22 cm mold for approx. 15-20 minutes. Let cool completely in the mold!<\/p>\n\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li>The Mousse layer (The &#8220;cloud&#8221;)<br>Ingredients:<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">250 g good quality dark chocolate<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5 dl whipping cream (very cold, min. 30%)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 egg yolks (optional, for a richer taste)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 pinch of salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Preparation:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Melt the chocolate over a water bath, then let it cool to room temperature (do not let it be hot, because the foam will collapse!).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beat 2 dl of cream until almost boiling and pour over the chocolate, mix until smooth (this is a ganache base). If you are using egg yolks, mix them in now.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beat the remaining 3 dl of cold cream until soft peaks form.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">First, loosen the chocolate cream with a little foam, then fold in the rest of the foam very carefully with a spatula to keep the air bubbles in.<\/p>\n\n\n\n<ol start=\"3\" class=\"wp-block-list\">\n<li>Assembly and decoration<br>Pour the mousse on top of the cooled sponge cake in the form.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Smooth the top and put it in the fridge for at least 6 hours (but best overnight).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Before serving: Sprinkle the top generously with unsweetened cocoa powder or decorate with chocolate shavings and fresh raspberries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udca1 Pro tips for success:<br>Temperature: It&#8217;s important that the melted chocolate is not hot when you add it to the whipped cream, otherwise the foam will melt and the cake will be solid, not fluffy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quality: Since this cake is almost entirely made of chocolate, choose one that you would enjoy eating on its own!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The perfect slice: Before cutting, dip your knife in hot water and wipe it dry.
