It’s refreshing, light, and perfect for holiday parties or Sunday lunches.

Here’s the classic recipe, structured so that the fruit doesn’t release water and the cream stays firm.

🍍 Step 1: The Pineapple Filling (The Base)
Raw pineapple should not be used directly in the cream, as the acidity of the fruit prevents the condensed milk from thickening.

1 medium pineapple (cut into small cubes).

1/2 cup of sugar.

1 cup of water.

Preparation: Place everything in a saucepan and let it boil for about 15 to 20 minutes. The pineapple will change color (become more translucent). Drain the excess syrup (you can use this syrup to moisten cakes!) and set aside the fruit pieces.

🥛 Step 2: The Belgian Cream (The Middle)
1 can of condensed milk.
500 ml of whole milk.
3 tablespoons of cornstarch.
2 sifted egg yolks.
1 teaspoon of vanilla extract.

Preparation: Mix the milk with the cornstarch (still cold) and add the condensed milk and egg yolks. Cook over medium heat, stirring constantly until thickened. Cook for another 3 minutes after boiling to remove the taste of the starch. Turn off the heat, add the vanilla and let cool.

☁️ Step 3: The Marshmallow Topping (The Top)
3 egg whites.
3 tablespoons of sugar.
1 carton (200g) of heavy cream (very cold).

Preparation: Beat the egg whites until stiff peaks form. Add the sugar and beat a little more until a glossy meringue forms. Turn off the mixer and gently fold in the heavy cream with a spatula.

❄️ Assembly and Finishing
Spread the Belgian cream (already cold) at the bottom of a baking dish.

Distribute the cooked pineapple pieces over the cream.
Cover everything with the marshmallow topping.
Refrigerate for at least 4 hours (ideally overnight).

Golden Tips for the Perfect Ice Cream
Crunchy Touch: Sprinkle grated coconut over the topping before refrigerating. Coconut and pineapple are an unbeatable combination!
Canned Pineapple: If you’re in a hurry, you can use canned pineapple in syrup, but remember to drain the syrup well.

Firmness: For an even firmer ice cream (sliced style), you can dissolve 1 packet of pineapple gelatin in 100ml of hot water and mix it into the still-warm Belgian cream.
Table: Why does pineapple need to be cooked?
State of the Pineapple Result in the Dessert

Raw Pineapple Contains an enzyme called bromelain that “breaks down” milk proteins, leaving the cream bitter and watery.
Cooked Pineapple The enzyme is neutralized by heat, the flavor intensifies, and the dessert is perfect.
Since today is December 27th, are you planning this delicious treat for your New Year’s Eve menu? Would you like suggestions for decorating your New Year’s table?

Pineapple Ice Cream (also known as Pineapple Delight) is the perfect dessert to achieve the right balance: the tartness of the fruit with the sweetness of the cream.
