The Peach (The Fruit)<br>Characteristics: A juicy, sweet fruit belonging to the rose family, eaten in summer and early fall. Rich in vitamins A and C, as well as dietary fiber.<br>Varieties: Hairy-skinned peach (Peach) and smooth-skinned nectarine (Nectarine).<br>II. The Peach Seed (The Treasure Within and the Danger)<br>The peach seed is the pitted seed of the peach, which is hidden under the woody skin along with the pit.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>The Danger \u2013 Amygdalin and Cyanide<br>Here\u2019s the most important thing to know: the inside of an apricot pit contains a compound called amygdalin.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Amygdalin: This is a cyanogenic glycoside. When the pit is crushed or digested, amygdalin is converted to hydrogen cyanide in the body.<br>Health Risk: Cyanide is extremely toxic. Consuming even small amounts can cause cyanide poisoning, which can be fatal.<br>In summary: You should not eat large amounts of apricot pits, almonds, or apricot kernels, or even small amounts, raw on a regular basis.<\/p>\n\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li>Uses (Extracted and Safe)<br>Although the kernel is dangerous in its raw form, extracts from the kernel have uses:<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Apricot Kernel Oil: The oil extracted from the kernel of the apricot (which is related to the peach) is widely used in the cosmetic industry (creams, massage oils) and in aromatherapy for its emollient and moisturizing properties. This oil is processed and does not contain cyanide.<br><br>Musk or almond flavor: Processed apricot kernels are sometimes used to flavor foods and liqueurs (such as the Italian Amaretto liqueur), but only in a form where the cyanide has been extracted or the amount is strictly controlled.<br>Important advice: If you eat the peach, throw away the kernel (the stone).
