The meringue wreath (or Pavlova wreath) provides a light, crispy base, which is crowned with cream and fresh berries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The key to success is the contrast of the perfect, crispy meringue and the fresh, tart filling.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udc51 Festive Pavlova Wreath (Meringue with Berries)<br>\ud83d\udcdd Ingredients<br>Quantity Ingredient Usage<br>4 pcs Egg Whites Room temperature.<br>250 g Granulated Sugar (very fine grain)<br>1 tsp. Food Starch (corn) This is the secret to the crispy outside, soft inside texture.<br>1 tsp. White wine vinegar or lemon juice Stabilizes the foam.<br>5 dl Cream (30-35% fat content) Cold, whipped to a stiff peak.<br><br>Decoration Berries Pomegranate seeds, raspberries, blueberries, red currants.<br>Decoration Mini-meringues Meringue balls painted white, red or green (optional).<br>\ud83d\udd2a Preparation (The Meringue Wreath)<br>Preparation: Draw a circle of approx. 25-30 cm in diameter (ring inside and outside) on a piece of baking paper. Preheat the oven to a very low temperature (approx. 110 \u00b0C).<br><br>Whipping the foam: Beat the egg whites with a pinch of salt until soft peaks form.<br>Adding the sugar: Slowly add the sugar, little by little, and continue beating until the foam is completely stiff, shiny and the sugar grains have completely dissolved.<br>Stabilization: Gently swirl in the vinegar\/lemon juice and cornstarch with a wooden spoon.<br>Shaping: Fill the mousse into a piping bag (preferably with a star nozzle). Pipe the mousse along the outline into a wreath shape. Leave a hollow in the middle for the cream.<br><br>Drying (The Secret): Pop it into the oven. Dry (bake) at a very low temperature for 60-90 minutes. The meringues should be white and crispy on the edges but soft on the inside.<br>Cooling: Turn off the oven and let the meringues cool inside (so they don\u2019t collapse or crack).<br>\ud83c\udf52 Filling and Decoration (The \u201cBerries\u201d)<br>Whipped Cream: Whip the cold cream with a little vanilla sugar until stiff.<br>Filling: Just before serving (so that the cream doesn\u2019t soak the meringue), spoon or press the whipped cream into the hollow of the wreath.<br><br>Decoration: Sprinkle generously with fresh, festive berries (pomegranate seeds, raspberries, currants).
