Fruit soups are the perfect, light appetizer before heavy holiday meals, or they can add a nice, spicy finish to a holiday menu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As we get into the holiday spirit, the key is to make the soup not just a cold cherry soup from the fridge, but warm, spicy and creamy, enriched with winter aromas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here is a recipe for the most popular Christmas fruit soup, Spiced Apple-Cinnamon Soup:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83c\udf4e Spiced Apple-Cinnamon Soup (Winter Special)<br>This soup is ideal as an appetizer or light dessert when served warm, smoothed with cream.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udcdd Ingredients<br>Quantity Ingredient Note<br>1 kg Apples Sour variety (e.g. Granny Smith), peeled and diced.<br>1 liter Water (or apple juice in a half-and-half ratio)<br>1 dl White wine (sweet) Optional, but gives a very festive flavor.<br>1 stick Cinnamon<br>4-5 pcs Cloves (whole)<br><br>1 pc Star anise<br>1\/2 pc Lemon juice and zest<br>To taste Sugar or honey Depending on the sourness.<br>2 dl Cream (cooking cream or whipped cream) For silkiness.<br>\ud83d\udd2a Preparation<br><br>Cooking: In a saucepan, bring the diced apples to a boil with the water\/apple juice. Add the spices (cinnamon sticks, cloves, star anise) and lemon zest.<br>Flavoring: Bring to a boil, then cook the apples over low heat until soft (about 10-15 minutes). Add the sugar\/honey and wine.<br>Blend: Remove the cinnamon stick and star anise from the pot (or cook them in a tea egg to avoid the need to fish). Blend the soup with an immersion blender until creamy.<br>Cream: Pour in the cream and bring back to the boil.
