Preparing the Caramel Base<br>Caramelization: Melt the sugar in a thick-walled saucepan over low\/medium heat. Do not stir, but rather shake the saucepan. Wait until the sugar has completely melted and turned into a beautiful, light brown, golden caramel. Do not let it burn, as it will be bitter!<br>Solution: Carefully pour the water over the caramel. Be careful, it will steam strongly at this time! Let it bubble slowly until the caramel is completely dissolved in the water, forming a thick syrup.<br>II. Making the Mulled Wine<br><br>Adding the wine: Pour the red wine into the caramel syrup.<br>Spices and plums: Add the prunes, cinnamon sticks, cloves, star anise and the thicker, washed peel of the orange (only the orange part, the white part can be bitter).<br>Heating: Heat the mulled wine very slowly and carefully.
