Grease and flour two 9-inch cake pans. I use Wilton Bake even strips to ensure nice, even cakes. Set aside.

In a large bowl, combine the sugar, oil, and eggs until blended. Add the flour, baking soda, baking powder, salt, and cinnamon. Beat for about 2 minutes. Add the grated carrots. Pour into prepared cake pans.

Bake for 30 minutes. Cool on a wire rack for ten minutes. Remove them from the pans and let them cool completely.

FOR THE GLAZE:

In a large bowl, combine cream cheese and butter. Beat with attached whisk for 3 minutes. Add the sugar, vanilla, and heavy cream. Beat for 3-4 minutes until light and fluffy. Add the chopped walnuts.

To assemble the cake, lay out a layer of carrot cake. Add the cheesecake then top with the second layer of carrot cake. Pipe it over the frosting, first on the sides and then on top!

Store in the refrigerator, covered, for up to 3 days. ENJOY

Ingredients FOR THE CHEESE CAKE LAYER: FOR THE GLAZE: 1 cup unsalted butter, softened 1 package (8 oz.) cream cheese, softened 1 tablespoon vanilla extract 1/4 cup heavy cream 4 […]

[3

post-1322","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-recipes
["GET
